potatoes
1 tsp (5ml)
salt
2 tsp (10ml)
dry mustard
2 tbsp (30ml)
brown sugar
2 tbsp (30ml)
plain flour
pinch
Cayenne pepper
2 cups (500ml)
a2 Milk™
3
egg yolks
3 tbsp (45ml)
butter
⅓ cup (80ml)
vinegar
1 tsp (5ml)
white horseradish
  1. Combine salt, mustard, brown sugar, flour and cayenne pepper in a heavy saucepan.
  2. Add a2 Milk™ and egg yolks. Stir until smooth.
  3. Cook over boiling water (or medium heat), stirring constantly until thickened.
  4. Stir in butter and vinegar. Chill thoroughly.
  5. Cut potatoes into halves. Place in cold water, bring to a boil and cook until tender but not falling apart. Drain well.
  6. Stir horseradish and mustard into dressing. Add all or as much as you’d like to the potatoes. Combine well and season to taste. Serve.
