- To make the waffle batter, in a large bowl, mix flour, salt, baking powder and set aside. Then in a separate bowl, beat the eggs. Stir in the a2 Milk®, butter and vanilla. Pour the egg mixture into the flour mixture; beat until blended. Preheat waffle iron to desired temperature.
- Add the bacon, spinach, halloumi, and chives into the waffle batter. Fold to combine.
- Pour batter into the pre-heated waffle iron for 6-7 mins (3 mins on each side) or until golden brown and crisp.
- Repeat with remaining batter. Set aside cooked waffles and keep warm.
- Heat the oil in a large non-stick frying pan and cook the eggs (your way) for 1-2 mins or until just cooked.
- Divide the waffles and top with an egg each.
- Sprinkle with salt and pepper to serve.
