Plain flour

bacon, chopped
2 cups
baby spinach, shredded
1 cup
grated halloumi
2 tbsp
Chopped chives
2 tsp
extra virgin olive oil

eggs
sprinkle
sea salt and cracked black pepper
  1. To make the waffle batter, in a large bowl, mix flour, salt, baking powder and set aside. Then in a separate bowl, beat the eggs. Stir in the a2 Milk™, butter and vanilla. Pour the egg mixture into the flour mixture; beat until blended. Preheat waffle iron to desired temperature.
  2. Add the bacon, spinach, halloumi, and chives into the waffle batter. Fold to combine.
  3. Pour batter into the pre-heated waffle iron for 6-7 mins (3 mins on each side) or until golden brown and crisp.
  4. Repeat with remaining batter. Set aside and keep warm.
  5. Heat the oil in a large non-stick frying pan and cook the eggs (your way) for 1-2 mins or until just cooked.
  6. Divide the waffles and top with an egg each.
  7. Sprinkle with salt and pepper to serve.
